The smell of Fall
Crisp leaves scratching sidewalks in the wind
Children scooping and freely pouncing piles
Mmmm. Apple pie and pumpkin spice.
The smell of Fall lingers in my childhood memories and with each season
the aroma takes me back……
and then…… “MOM!!! I am soooo starving! Is snack ready YET????”
(waaa, waaa, waaa)
So WARNING! Please allow ample time for baking that your kids will not starve to death while waiting.
Make Stuff Monday~
Try this savory warm Apple Crisp to add the taste and aroma of Autumn to your home…and your belly!
Ingredients:
- 3 pounds tart apples
- 2 tablespoons lemon juice
- 1/2 cup light brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/3 cup all-purpose flour
- 1/3 cup granulated sugar
- 1/3 cup rolled oats
- 4 tablespoons cold butter (I use dairy-free)

Peel, core and chop the apples; toss in a bowl with lemon juice.

In a separate bowl, combine the brown sugar and cinnamon; add to the apples and toss to combine.

In another bowl combine flour, sugar and oats. Cut butter into 8 small pieces, and cut butter into flour with a pastry blender or two forks until mixture is crumbly. Chef’s (me) note: I added some extra oats in to thicken it up a bit.

Butter a 9-inch square baking dish (As you can see, it works fine in an larger dish). Spread apple mixture in bottom of baking dish then sprinkle with flour mixture. Bake at 375° for 30 to 45 minutes, or until apples are tender and topping is lightly browned.

Serve warm or at room temperature with vanilla ice cream (we love Soy Dream vanilla), and allow the essence of Autumn into your soul with some delicious homemade Apple Crisp!

Our kiddos really loved this one…begging for more, in fact. Next time, I may have to double the recipe to feed these little tummies. However, it did actually make enough for 6 kids (and one adult who will remain un-named).
