A few weeks ago, I shared with some of my Twitter friends that I had tried a great new recipe! I was so excited about it and was asking around if anyone had been eating Quinoa. This dish has so many awesome ingredients in it and it not only sounds delicious – it really IS delicious! I went on to Tweet about the brocooli, the roasted red peppers and the Feta. Yes. The Feta.
Someone tweeted me back with “you had me at Feta”
There is something so tasty about these ingredients alone isn’t there? Put them together and BLISS!
I found this recipe from sproutedkitchen where you should go give it a peek! I must admit, I had an experience with some phantom capers (I swear they were in my grocery cart and I have not seen them since???) so I used green olives in place. Seriously – anything with feta and olives is so so good it must be outlawed somewhere!
Oh! And it can be adapted to allergy-free by using goat cheese instead of feta, and we eliminated the chickpeas too being part of the legume family.
Just look at this….I know, right?

I have a great Quinoa recipe with olive oil, cherry tomatoes, basil, toasted pinenuts & feta. It is amazing! I have to try your recipe, it looks and sounds fabulous. And with Quinoa being a super food it is great to work it into our diet as often as possible!

This sounds SO DELICIOUS! i am definately going to try this one as I have been experimenting with quinoa (i posted a TASTY Mexican Quinoa Bean Medley recipe) and am always trying to find ways to incorporate quinoa into our diet without my husnband noticing. (he’s not its biggest fan
