Healthy Grilled Pepper Salad

“Make Stuff Monday”

This recipe is so easy, delicious and healthy that I KNEW I had to share it with you! The colorful concoction of peppers, olives and sun-dried tomatoes tossed with a tasty balsamic vinaigrette makes a great side dish or with a few “extras” can be a whole meal! Our family thoroughly enjoyed this recipe with some added grilled chicken and topped with feta cheese! Perfectly wonderful.



INGREDIENTS

  • 4 bell peppers, (mixed colors), halved, seeded and stemmed
  • 1/4 cup halved and pitted oil-cured black olives
  • 1/4 cup rinsed and chopped oil-packed sun-dried tomatoes
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/8 teaspoon salt
  • 3 large chicken breasts, boneless and skinless cut into cubes
  • 3/4 cup crumbled feta cheese

PREPARATION

1. Cut peppers into “bite-size” pieces.

2. Lay out a large piece of foil and top with peppers, olives and tomatoes.

3. Cut chicken into cubes and add into the vegetable mix. Top with oil, vinegar and salt.

4. Wrap the foil pack into a nicely sealed “pocket” and grill until chicken is no longer pink and veggies are crisp tender! Aprox 20-30 minutes on medium heat..

5. Sprinkle feta cheese on top and enjoy!

This recipe came from eatingwell.com with a few minor adjustments on my end! It turned out really tasty and it is so versatile that you could use serve it chilled, or warm with another type of meat or you can even serve it over quinoa or couscous for added nutrition and yumminess!! As you may have guessed, our family adores olives so you might just see quite a few meals here with these scrumptious little babies.
