So….about her cookbook “The Allergen-Free Baker’s Handbook? Awesome, wonderfully magnificent, and highly recommended! Highly! Did I mention I highly recommend this? Yeah. That fab!

To make things even easier, I demystify alternative foodstuffs and offers an insider’s advice about choosing safe products and sources for buying them” (Cybele).
and as I mentioned before, she is a wife and mom – who has dedicated herself to helping her family who all suffer from so many food allergies. These allergies have not brought her down – they have lifted her spirit, challenged her and inspired her to use the skills of cooking that she learned as a young girl working in restaurants – to create meals and snacks that her entire family could safely enjoy. With her passion for cooking and love of her young boys and husband, she has accomplished so much for all of us who have had to struggle to find foods that were safe to eat and tasted yummy as well.
Our E recently graduated from Preschool as some of you may know and there was an end of the year celebration for parents to attend with their child. Of course, as with any “celebration” it always seems to have food in the equation. The teacher’s and children had prepared cake – so I put on my apron and allergy-free thinking cap and got to work with The Allergen-Free Baker’s Handbook! I came to page 92 and I just knew I had hit the jackpot! Vanilla Cupcakes with Vanilla Frosting…perfect! Rather than cupcakes however, I baked it in a cake pan and crossed my fingers. The result? A very soft, chewy, mouth-watering vanilla cake that was so much better than any vanilla cake I have ever ever tasted. Ever!
The kids and I licked every single beater, spoon and batter bowl available to us that day. There was no need for a rubber spatula as our fingers worked better than anything *wink*
The very best part was when a friend of our E asked if she could have his cake instead of the one that the school had prepared – angels sang and bells rang across the globe! An allergy-free cake was being begged for – pawned after – sought with crazy desire! This book is full of bell-ringing, angels singing kinds of recipes for ALL OF US!!!
Not only are they perfect for those with food allergies and food intolerances, “these entirely vegan recipes are also perfect for anyone looking to avoid artificial and refined ingredients, and those interested in baking with healthful new gluten-free flours such as quinoa, sorghum, and amaranth” (The Allergy-Free Baker’s Handbook). They come kid-approved and E approved too…plus a few extra preschoolers!

I think this article is fantastic more Mom’s should be put forward for all the wonderful things they do. Especially Mom’s with special need children.
Cybele’s books has really made my life easier, I don’t have to worry so much on what I am cooking. I have a son with allergies, her recipes are easy and very tasty. It also gives me more time to spend with my family, instead of tring to find something to cook. Thanks Cybele….. keep those cook books coming.
I don’t have allergies, but I did buy a quinoa cook book that has a ton of yummy looking desserts that use quinoa flakes…have you tried that yet? (I haven’t)
I am so glad that you stopped by! Cybele’s book has helped us too and you are right – it helps so much for those who do have food worries! I’m so happy for you that you have already tried her recipes and that it’s helped make life a bit easier
