I recently saw a post in the New York Times on a new/old pancake recipe. This idea is completely new to me, and beyond astonishing that something like this could be done. The beauty is that the idea of fresh flowers tucked delicately into a warm and moist pancake is not at all new! This “oldie but goodie” is so classy that the post originated from the sophistication of The New York Times! It’s a neat one that I hope to be able to try sometime! Let me know what you all think
…..”So often, I’m dazzled by some new gastronomic “discovery” only to look it up on the Internet and find hundreds of thousands of references.
This happened not long ago; my wife, Jackie, was in northern England visiting her father, and they entertained a neighbor, Christa, who was born in Hamburg. I am told that, strolling in the garden, Christa’s eyes widened when she saw the abundant elderflowers. She took some with her, and left Jackie with the most marvelous idea for dessert, remembered from her childhood: elderflower pancakes. You ladle pancake batter into the buttered skillet, press whole clusters of elderflowers into the batter and, when it is cooked through, gently pull away the stems, leaving the tiny blossoms embedded in the pancakes.
This is a delicate thing, but utterly enchanting” (nytimes).
