Just in time for football season – I got something HOT to share with ya!! I spent last weekend preparing some super delish chili for the fam that was G.O.N.E. in days (told ya we love our Sunday soups). It is so easy to make and I love to curl up on the couch under a blanket with a hot bowl of chili and watch the Colts or Browns – or watch my husband watch the Colts and Browns while I just sit and eat
Ingredients:
2-3 pounds lean ground beef (can substitute with turkey burger)
1 whole onion, diced
1 green pepper, diced
26.46 ounce box of Pomi tomatoes
1 large can of tomato juice or vegetable juice
2 cups dry pinto beans (follow pkg directions of soaking overnight)
1/4 cup ground flax seed
-diced jalapenos (optional)
1. Cook the ground beef until no longer pink. I like to use a strainer to rinse off any excess grease!
2. Add all ingredients into large stockpot and let it simmer until perfection!
(Pssst! Wanna know who Pomi is? I won’t tell. I just won’t. Okay fine I will!)
I was sent Pomi tomatoes to sample and because chili holds a place of high importance in our life – I knew that they had to pass the Smiling Green chili test. Verdict? They pass! And not with a “C’ like my college algebra, but an A!!
Why is it that when you eat something healthy – it somehow tastes better? I always feel this sense of extra delight when I have made a home cooked meal or something by scratch. Not that it really makes a HUGE difference, but in some weird way – I like it more! So it was way cool to have Pomi to use! You may wonder why I would be sharing with you my thoughts on tomatoes? Of all things…tomatoes? I know, but here ‘s the deal. Canned stuff is ick. And ick can make you sick. There are levels of BPA in canned foods that I myself am not comfortable with, So you know what? Tomatoes suddenly do become meaningful and important and I am glad that someone out there in the food industry cares enough to put it in a box. How hard is that, seriously?

What an interesting way to package tomatoes! I love it because it IS such a challenge when buying canned ones. I love Eden brand because their cans are BPA-free – yummy looking recipe!!
I love this whole entire post and definitely will make this recipe. Who can resist our chef Lynn’s enthusiasm and happy vibe? Not moi.
Oh thank you Sarah! You are too sweet
“Chef Lynn” LOL
I’ve been buying the boxed Pomi tomatoes for the past year. I didn’t know they were recyclable though. Do you just put them in with the boxes or what?
