As always, Kelly Rudnicki, creator of “The Food Allergy Mama’s Baking Book” has a yummy treat that’s just perfect for fall! Kelly worked diligently (which in Lynn World translates to “neurotic”) to find a recipe that worked for chocolate chip pumpkin muffins that were not only dairy, egg and nut-free….but tasted scrumptiously delicious too! Nice work Kelly – these muffins? Well let’s just say BRING IT ON!
The Food Allergy Mama’s Baking Book (which I reviewed HERE) has been such a great resource for us as a family with a food-allergic child. The recipes in this book are a HUGE hit for ALL of us – we make batches of treats for our entire family to enjoy, and that we do! *wiping crumbs from face*
So as your picking out your pumpkins this week, ya might wanna keep this recipe in mind! Jis’ sayin.
