Every once in awhile, we spend our New Year’s getting
whacky wild,
dancing frantically,
belting things out from the 80′s that trust me…no one likes to hear,
followed by a lovely toast!
It’s pretty crazy and usually goes a little something like this,
“Let’s rent a movie!”
“No let’s just blow the speakers out of our old boom box and have some serious fun”
“Oh yeah, I love Rock n Roll by Jone Jett and the Blackhearts – woot woot (yes, like total old-fart geekazoids)
“The toast? Well whole wheat of course”
(okay, I am lying. Just when you thought I was really cool. We are way bigger geekazoids than that. We actually don’t party at all and typically go to sleep at our normal 8 o’clock bedtime. Yes, I am very well aware of the social faux pas I just admitted to…sigh).
Okay so if you are cooler than that, you might decide to actually go out and bowl or something. And if, after a long night of midnight bowling, you decide you are ready to sleep…you might sleep like a baby through the late hours of New Year’s Day. But that’s if you do not have small children who love to creep into your bed and pry your eyeballs open way before they are physically able. So if the stars align and you happen to get a baby sitter – you might like the following recipe.
It’s a do-aheader. The kind you can prepare in advance and it’s ready to go when you are not! Gotta love that on a morning when the kids are at grandma and grandpa’s! This dish is a family fav from my step-mom, called “Breakfast Casserole” and it is easy and a true crowd pleaser. I don’t make it much just because of our E’s egg allergies…I would rather make something we can all enjoy. BUT – since my hubby loves it, I try to include it at least every 5 years or so! With all the eggs, whole wheat and I even add frozen spinach to mine sometimes – thought it might be a good one for New Year’s morning to start 2011 in a healthy way!
Breakfast Casserole:
1 pound of bulk sausage
6 organic eggs
3 C organic milk
1 tsp. salt
1 tsp. dry mustard
6 slices of bread (I use whole wheat), cubed
1 C sharp cheddar cheese, grated
Brown sausage and drain well. Let cool. Combine the eggs, milk, salt and dry mustard. Beat with hand mixer until well blended. Stir in bread cubes, cheese and sausage. Pour mixture into lightly greased 9 x 13 baking dish and cover. Refrigerate overnight.
Remover from refrigerator for 1/2 hour before baking. Bake uncovered for 45 min. Let stand for 5 min after baking. Cut and Serve! (serves 6-8)

Sounds delicious! I wonder how it would work with duck eggs? Are you able to source these items locally too which you are using? That would make this dish perfect!! Thanks for sharing.

I agree – vegetarian would be great!! My hubby would never be able handle that so I would have to make two! LOL
I would think duck eggs would work but then, I have never tried that! Hmmm? Yes, I can source these items locally as we have a large Amish community with wonderful handmade breads and eggs are plentiful in this area too! Thanks for sharing your thoughts!
@Lynn, if you do use duck eggs, PLEASE, let us know, especially if you are sourcing the items locally. Let us know what farms or friends supplied, etc. We would love to feature an Amish story! Take some photos too for us to feature! Thanks
I absolutely will! That sounds like a fun challenge! I can definitely say that Amish noodles and breads are easy to come by – but most will not allow you to take their photos. Hmmm, perhaps I can figure out a way to get something though! I don’t think it’s against the beliefs of their farm animals to be in photos…hmmm!
