Celebrate Dr. Seuss’s Birthday on March 2nd, along with the NEA (National Education Association) for the annual “Read Across America Day” by starting your day out with some Suess-tastic green eggs and ham!
This recipe comes from Every Day with Rachael Ray and it’s full of vitamins and minerals for the kids with avocados, cilantro leaves, tomatillos and of course – the kids are going to think it’s super fun!

One of my all time favorite books! My kids celebrate Dr. Seuss’s Birthday every year in school. They all come home wearing big Cat in the Hat hats!
Oh isn’t it fabulous Lori? I have always adored Dr Seuss books and am thrilled that my kids love them too now
So cute about the hats!!
