Here’s a yummy brownie recipe I found that our E can have (it does not contain dairy or eggs) and is suppose to be vegan. However, I learned something new today – did you know that some vegans will not eat white sugar? Yep, according to vrg.org, “White sugar is a close call. It is normally considered vegan, but actually it is often whitened in a process that uses animal bones.”
So if you are vegan and prefer not to eat white sugar, it’s my understanding that you can substitute the white sugar for raw sugar! These brownies are really tasty and turn out to be a “cake-like” consistency and a rich, moist texture. In other words – these chocolate goodies will make you want to kick your heels together and beam off into space…or something like that.
I hope you enjoy these – as my super “Rock-Star” brother says… they’re “nails”.

Ingredients
- 2 cups unbleached all-purpose flour
- 2 cups white sugar (raw sugar for a truly vegan recipe)
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup water
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
Directions
- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, vegetable oil and vanilla; mix until well blended. Spread evenly in a 9×13 inch baking pan.
- Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares.

Those sound fabulous! I made some brownies the other day and added about 1/2 a bag of Heath toffee bits. They melted into the brownies and my hubby and MIL were asking what I did to the brownies to make them so good!
Mmmmm! I’ve tried this recipe and it is fabulous … actually, a little too fabulous … it’s easy to eat the whole pan and then easily mix up another batch. I must remind myself … vegan does not mean low-cal. lol!
