Slow-Cooker Warm Winter Pot Pie {recipe}

This one’s a crowd pleaser….promise! Our family can *not* get enough of it so I always make a double batch! It’s especially crazy good on a cold winter evening – fill ‘da belly up with a big pile of warm, savory pot pie! Mmmm…okay, now I have to make this. Dangit. I JUST went to the grocery!

Pot Pie!!!

Ingredients:

- 3 cups fresh vegetables (fresh always tastes incredible! This is a great way to use up any leftovers from the fridge!)

- 1 small beef rump roast or chicken breast

- 4 cups broth from slow cooker

- 6 TBSP cornstarch mixed with 1/2 cup cool water

- beef or chicken bouillon

- Homemade Baking Powder Biscuits (see Recipe!!)

1. Combine, roast (or chicken) in crock pot with a few TBSP of bouillon flavor and enough water to cover the roast.

2. Cook on high heat for aprox 6-8 hours.

3. During the last few hours of cooking, add vegetables.

4. When cooking is complete, remove the roast and veggies from cooker reserving 4 cups of broth. Place meat on a cutting board and using two forks (or your fingers once it cools a bit) shred the meat into small bite-size pieces.

5. Using a small separate bowl, mix together the cornstarch and cool water. Slowly add this back into your crock pot with the broth and allow for it to come to a boil. This will create your gravy!

6. In a greased casserole dish, add meat, veggies and gravy. Top with Biscuit Dough and bake at 400 or until biscuits are cooked and slightly golden…..
